Microwaving leftover pizza results in a rubbery crust and sweaty cheese. To restore the original glory, you need dry, direct heat.
The Skillet & Steam Method
- Place the cold pizza slice in a non-stick skillet over medium-low heat.
- Cover with a lid and cook for 2-3 minutes until the bottom is crispy.
- Add 2 drops of water to the edge of the pan (away from the pizza) and quickly replace the lid.
- Wait 1 more minute. The steam will melt the cheese perfectly while the skillet keeps the crust crunchy.
Why the Water?
The tiny amount of steam rehydrates the toppings and melts the cheese without touching the crust, ensuring the slice isn't dried out.
