The Ice Cube Magnet
Wrap a few ice cubes in a paper towel or a sturdy napkin. Skim it across the surface of the hot liquid. The cold causes the fat to solidify and cling to the towel instantly.
The Fridge Chill
If you have time, refrigerate the dish. The fat will rise to the top and form a solid, easy-to-remove 'cap' that can be lifted off with a spoon.
