Once pasta passes the point of al dente, you can't really 'un-cook' it. But you can change its destiny.
The Sauté Solution
Drain the pasta and immediately rinse with cold water to stop the cooking. Sauté it in a pan with a bit of butter or olive oil over high heat. The slightly crispy exterior will compensate for the soft interior.
The Baked Pasta Pivot
Turn it into a pasta bake! Mix with sauce and plenty of cheese, then bake until the top is golden and crunchy. The texture contrast hides the overcooked noodles.
